  • 3 zucchini
  • Fresh dill (to taste)
  • 1 onion (chopped)
  • 1 clove garlic (minced)
  • Salt (to taste)
  • Italian seasoning (optional)
  • 1 cup (240 ml) thick Greek yogurt
  • 3 eggs
  • 2 cups (200 g) oatmeal
  • 1 teaspoon baking powder
  • 1 teaspoon black pepper
  • 5.3 oz (150 g) cheese (grated)
  • 8-inch (21 cm) baking dish

Directions

  1. Grate the zucchini and place them in a large bowl. Add the chopped onion, minced garlic, fresh dill, salt, and pepper. Mix well.
     

  2. In a separate bowl, whisk together the Greek yogurt and eggs. In a blender, pulse the oatmeal with the baking powder and black pepper until combined. Gradually add the yogurt-egg mixture to the oatmeal blend and mix until smooth.

  3. Combine the grated cheese with the zucchini mixture. Stir well, then pour the oatmeal-yogurt mixture into the zucchini bowl. Mix until evenly combined.

  4. Pour the mixture into a greased 8-inch (21 cm) baking dish. Smooth the surface with a spatula.

  5. Bake in a preheated oven at 360°F (180°C) for 35–40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
