Ingredients

  • 2 zucchini
  • 1 teaspoon salt
  • 1 carrot
  • Fresh parsley (to taste)
  • 1 potato
  • Italian herbs (to taste)
  • Black pepper (to taste)
  • 2 cloves garlic (minced)
  • 3.5 ounces (100 grams) cheese, grated
  • 1/2 cup (50 grams) oatmeal
  • 2 eggs
  • Wheat flour (for coating)

Directions

  1. Finely chop the zucchini and place it in a sieve over a bowl. Sprinkle 1 teaspoon of salt over the zucchini and let it sit for a few minutes to release excess moisture.

  2. Finely chop the carrot and add it to a mixing bowl. Squeeze the zucchini to remove any remaining liquid and add it to the bowl with the carrot. Add chopped fresh parsley, grated potato, Italian herbs, black pepper, minced garlic, and grated cheese to the bowl. Mix well.

  3. In a blender, grind the oatmeal into a fine powder. Add the eggs to the ground oatmeal and mix until combined. Combine the egg-oatmeal mixture with the zucchini mixture.

  4. Shape the mixture into round, elongated rolls. Lightly coat each roll with wheat flour.

  5. Heat a pan over medium heat and fry the rolls, turning them occasionally, until golden brown and cooked through.
