  • 160 g (5.2 oz) cold butter, cubed

  • 4 tbsp sugar
  • 600 g (21.1 oz) firm cherries, pitted
  • 6 tbsp sugar
  • 3 tbsp cornstarch
  • 3 tbsp water
  • 1 egg white
  • Sugar, for sprinkling

Directions

1. Step

In a mixing bowl, combine the flour, baking powder, and salt. Add the cold butter and rub it into the flour mixture until it resembles coarse crumbs. Stir in the egg, egg yolk, and sugar, mixing until a smooth dough forms. Divide the dough into two equal parts. Wrap and refrigerate one portion for at least 15-20 minutes.
