  • Egg: 1 whole + 1 egg yolk
  • Egg white: 1 piece (for coating)
  • Vegetable oil (or clarified butter): 100 grams
  • Sugar: 120 grams
  • Honey: 60 grams
  • Vanilla sugar: 1 teaspoon
  • Salt: A pinch
  • Baking powder: 10 grams
  • Walnuts: 70 grams

Directions

  1. Blend the walnuts (70 grams) in a blender until finely ground. Set aside in a bowl. In another bowl, whisk together: 1 whole egg, 1 egg yolk, 120 grams of sugar, and a pinch of salt. Once combined, add 60 grams of honey and mix again. Incorporate 100 grams of clarified butter or vegetable oil, and mix until smooth.

  2. In a separate bowl, mix together: 250 grams of flour and 10 grams of baking powder. Gradually add the flour mixture to the wet ingredients to form a dough. Knead the dough gently with your hands for 2–3 minutes until smooth.

  3. Roll the dough into small, round balls. Lightly coat each ball with egg white. Roll the coated balls in the blended walnut mixture until evenly covered.

  4. Preheat your oven to 180°C (356°F). Place the walnut-coated balls on a baking tray lined with parchment paper. Bake for 15–20 minutes, or until golden brown.
