  • 1 egg
  • 160 g all-purpose flour
  • 3 g cornstarch
  • 1 g baking soda
  • 3 g baking powder
  • 100 g unsalted butter
  • 1 g salt
  • 60 g brown sugar
  • 40 g white sugar
  • 125 g dark chocolate

Directions

  1. Preheat the oven to 170°C (325°F). Spread the walnuts on a baking tray and bake for 7 minutes until fragrant. Allow them to cool, then transfer them to a container.

  2. In a small bowl, beat the egg until well mixed. Set aside.

  3. In a mixing bowl, combine the all-purpose flour, cornstarch, baking soda, and baking powder. Mix thoroughly.

  4. In another bowl, cream the unsalted butter with the salt. Add the brown sugar and white sugar, mixing until smooth. Incorporate the beaten egg and gradually fold in the flour mixture. Once combined, stir in the toasted walnuts and dark chocolate.

  5. Divide the dough into 6 equal portions and refrigerate for 1 hour.
