Directions

  1. Peel and grind the potatoes (350 g) and carrots (120 g) into a fine mixture. Mix with ½ tsp salt and set aside.

  2. Finely chop green onions (20 g) and onions (70 g).

  3. Break 3 eggs into a pan. Fry on medium heat while stirring until scrambled, then set aside.

  4. In a large bowl, mix the mashed potatoes and carrots with. Chopped green onions, Chopped onions, Black pepper (⅙ tsp), Salt (⅕ tsp), 1 tbsp cooking oil. Additional black pepper (⅕ tsp) and salt (¼ tsp) for seasoning. Add 1 egg to bind the mixture. Moisten spring roll wrappers with water as needed and mix until pliable.

  5. Take a spring roll wrapper, fill it with the potato-carrot mixture, and roll tightly.
