Directions
1. Prepare Tomatoes
Slice 2 tomatoes into 10 round pieces.
2. Beat the Eggs
Crack 2 eggs into a bowl. Add salt and chili powder and beat well.
3. Cook Tomatoes
Heat olive oil in a round pan over low heat. Arrange 7 tomato slices nicely and lightly cook them. Flip and sprinkle salt and chili powder on top.
4. Add Eggs
Once tomatoes are slightly cooked, pour the beaten eggs over them.
5. Add Tortilla
When the eggs are half-cooked, place a tortilla over the top and cover the pan.
6. Flip and Add Cheese
After a while, flip the whole thing. Add mozzarella cheese on one half and fold it.
7. Final Cook
Cook for a few more minutes on low heat until the tortilla turns golden and crispy and the cheese melts.
