  • 7 grams instant coffee powder
  • 140 ml hot water
  • 20 grams sugar (for coffee mixture)
  • 8 grams Kahlua (coffee liqueur)
  • 80 grams chocolate
  • Cocoa powder, for dusting
  • Ladyfinger cookies

Directions

  1. In a bowl, mix 140 ml of hot water, 7 grams of instant coffee powder, 20 grams of sugar, and 8 grams of Kahlua. Stir until the sugar dissolves and set aside.

  2. In a separate heatproof bowl, combine 60 grams of egg yolk, 25 grams of water, and 53 grams of sugar. Place the bowl over a pan of simmering water (about 70°C or 158°F) and whisk until the sugar dissolves and the mixture is smooth. Remove the bowl from heat and beat with an electric mixer until light and fluffy.

  3. In another bowl, whisk together 250 grams of mascarpone cheese and 210 grams of fresh cream. Gently fold in the egg yolk mixture, using an electric mixer if needed, until smooth and well combined.

  4. Dip the ladyfinger cookies briefly in the coffee mixture until moistened.

  5. In a serving dish, arrange a layer of soaked ladyfinger cookies. Spread a layer of the mascarpone mixture over the cookies. Repeat with another layer of soaked cookies and mascarpone mixture. Let it sit at room temperature for 30 minutes.

  6. Melt 80 grams of chocolate and spread evenly over the top layer. Dust with cocoa powder to finish. Allow to set before serving.
