  • 110 g butter (melted)
  • 100 g sugar
  • 100 g brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon instant coffee
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking bicarbonate
  • A pinch of salt
  • 180 g mascarpone cheese
  • 120 g whipping cream (full cream)
  • 3 tablespoons icing sugar
  • 1/2 teaspoons vanilla extract
  • Cocoa powder (for sprinkling)

Directions

  1. In a bowl, combine 110 g melted butter, 1 egg, and 1 tablespoon instant coffee. Stir well. Add 1 teaspoon vanilla extract, a pinch of salt, 1/2 teaspoon baking powder, 1/2 teaspoon baking bicarbonate, 230 g flour, 100 g sugar, and 100 g brown sugar. Mix until the dough is well combined.Cover the dough and refrigerate it for a while.

  2. In a separate bowl, beat together 180 g mascarpone, 120 g whipping cream, 3 tablespoons icing sugar, and 1 1/2 teaspoons vanilla extract until smooth. Cover with plastic wrap and set aside in the fridge.

  3. Once the dough has chilled, take it out and divide it into 50 g portions. Roll each portion into a ball and place on a baking tray. Bake at 180°C (350°F) for about 10 minutes. After baking, remove the cookies from the oven and gently press them down.
