Ingredients

  • 6 prawns
  • 100g cooked squid (cut into bite-sized pieces)
  • 2 eggs
  • 12g (1.5 tbsp) milk or coconut milk
  • 3g (1 tbsp) oyster sauce
  • 2g (0.5 tbsp) sugar
  • 2g (1 tsp) chili powder
  • 2g (1 tsp) curry powder
  • 20g unsalted butter (or cooking oil)
  • 7g (0.5 tbsp) minced garlic
  • 1 pinch salt
  • Chopped green onion or basil
  • Red chili (optional)
  • Extra chili powder for garnish
  • Cooked rice

Directions

  1. Finely chop the green onion. In a mixing bowl, whisk together: 2 eggs, 3g (1 tbsp) oyster sauce, 2g (0.5 tbsp) sugar, 2g (1 tsp) chili powder, 2g (1 tsp) curry powder, 12g (1.5 tbsp) milk or coconut milk
    Mix well and set aside.

  2. Heat a pan over medium heat. Add 20g unsalted butter (or cooking oil). Sauté 7g (0.5 tbsp) minced garlic until fragrant. Add 6 prawns, 100g cooked squid, and a pinch of salt. Cook until the prawns turn pink and are fully cooked. Remove the seafood from the pan and set aside.

  3. Add more cooking oil to the pan. Pour in the egg mixture, ensuring it spreads evenly. Place the cooked seafood evenly over the omelet. Sprinkle chopped green onion or basil and red chili (if using). Cover the pan with a lid and cook on low heat until the eggs are set.

  4. Once cooked, sprinkle additional chili powder for extra spice. Serve hot with cooked rice.
