Directions

  1. Peel and slice the sweet potatoes into thin, small pieces. Place the slices in a bowl, add water, and rinse thoroughly. Drain the water, then add 1 tablespoon of rice flour and ½ teaspoon of salt. Mix well to coat the sweet potatoes evenly.

  2. Heat a little cooking oil in a non-stick pan over medium heat. Arrange half of the sweet potato slices evenly in the pan, pressing them gently with a spoon to form a compact layer. Cover with a lid and cook for 5 minutes. Remove the lid, press lightly again, then flip the layer carefully. Cook until both sides are golden brown and crispy. Remove from the pan and set aside.

  3. Repeat the process with the remaining sweet potatoes to create the second layer. Set aside when done.

  4. In the same pan, add a pinch of salt, the unsalted butter, and 1.5 teaspoons of sugar. Let the butter melt and mix evenly. Place one layer of the cooked sweet potatoes back into the pan. Add a generous layer of mozzarella cheese on top. Place the second layer of sweet potatoes over the cheese, pressing gently to seal. Cover with a lid and cook over low heat until the cheese melts and the flavors meld together.
