  • Honey (optional, depending on the sweetness of the sweet potato)
  • 2 tablespoons flour (rice flour or starch can be used)

Directions

  1. Peel the large sweet potato and place it in a bowl. Stuff the sweet potato with the chopped mozzarella cheese. The cheese will melt quickly from the heat of the sweet potato. Add honey (if desired) and mix well.

  2. Add 2 tablespoons of flour (rice flour or starch). Adjust the amount of flour based on the texture of the sweet potato. Mix thoroughly with your hands. If the mixture feels too stiff, add a small amount of milk and mix until smooth.

  3. Transfer the mixture to parchment paper. Press it flat with your hands, then roll it evenly with a rolling pin. Flatten it into a sheet and lightly score it with a knife to create a grid.

  4. Cut the dough into 9 equal pieces. Shape each piece into an isosceles triangle and roll them into croissant shapes. Place the rolled pieces in a bowl. Brush lightly with a mixed egg for color and sprinkle with coarse salt if desired.
