  • 1 sweet potato
  • 3 cherry tomatoes
  • 3 olives
  • Fresh parsley (a small handful)
  • Mozzarella cheese (grated)
  • Tomato spaghetti sauce (as needed)
  • Olive oil

Directions

  1. Finely chop the olives, cherry tomatoes, and parsley. Peel the sweet potato and slice it into 10 thin pieces. Extract Sweet Potato Juice:

  2. Place the sweet potato slices on a piece of tissue paper, cover with another tissue, and press them firmly with a glass to release the juice. Squeeze out any remaining juice by hand and set the sweet potato slices aside.

  3. Lightly brush the sweet potato slices with olive oil and arrange them in a single layer in the air fryer.Bake at 180°C (356°F) for 10 minutes.

  4. Turn the sweet potato slices over using a spoon. Bake for another 5 minutes at 180°C (356°F).

  5. Remove the sweet potato slices from the air fryer. Spread a thin layer of tomato spaghetti sauce over each slice.

  6. Top each slice with mozzarella cheese, a bit of the chopped cherry tomato, olive, and parsley. Return the slices to the air fryer and bake at 180°C (356°F) for 5 more minutes, or until the cheese is melted and bubbly.
