  • 500–600 grams sweet potatoes
  • 150 grams water
  • 2 grams agar agar powder
  • 1 gram salt

Directions

  1. Preheat your oven to 180°C (356°F). Thoroughly clean the sweet potatoes and wrap them in aluminum foil. Bake for 40 minutes to 1 hour, or until tender. Once baked, peel the sweet potatoes and mash them until smooth.

  2. In a pan, combine 150 grams of water, 2 grams of agar agar powder, and 1 gram of salt. Heat the mixture over medium heat, stirring continuously for 2 minutes. Pour the heated mixture into the mashed sweet potatoes and mix thoroughly.

  3. Transfer the potato mixture to a small bowl and cover it with a polymer bag or plastic wrap for 2 minutes. Allow it to set, then cut the mixture into small pieces as desired.
