Sweet Potato Glutinous Rice Balls are a delightful and chewy dessert made from a perfect blend of mashed sweet potatoes, glutinous rice flour, and a hint of sweetness.   • 200 grams sweet potato
  • 200 grams glutinous rice flour
  • 100 grams warm water (adjust as needed)
  • 1 tablespoon sugar
  • A pinch of salt
  • Cooking oil (for kneading and handling)

Directions

  1. Peel and mash the sweet potato (200 grams) in a bowl. Add 1 tablespoon of sugar and mix well. Set aside 100 grams of the mashed sweet potato for the filling. In a separate bowl, combine 100 grams of glutinous rice flour, a pinch of salt, and 100 grams of warm water. Adjust water as needed to achieve a smooth consistency.

  2. Microwave the dough mixture for 2 minutes. Remove from the microwave, mix thoroughly with a spoon, and knead until slightly sticky. Microwave again for another 2 minutes. After the second microwave cycle, mix and knead the dough while it cools until it becomes smooth and sticky.

  3. Place the dough in a polythene bag lightly coated with cooking oil. Add the reserved sweet potato filling to the dough. Knead thoroughly inside the bag until the dough is smooth and elastic.

  4. Cut the dough into smaller pieces and grind them in a blender or grinder until smooth. Spread the ground dough onto a plate.

  5. Oil your hands to prevent sticking. Take small portions of the dough and shape them into small balls. Place the balls on a cake flour-dusted pan or plate. Sprinkle more cake flour over the balls to prevent sticking.
