  • 1 Sweet Potato
  • 2 Eggs
  • 4 slices of Bacon
  • Cheese (your choice)
  • Mozzarella Cheese

  • Olive Oil (or Butter)

Directions

  1. Cut the potato into four pieces. Take one half and make a deep cut. Flip it over and cut diagonally to create a visually appealing shape. This helps with even cooking and baking.

  2. Cut the sweet potato into four pieces. Repeat the same cutting process as with the potato.

  3. Place the potato and sweet potato pieces in a bowl and wash them thoroughly to remove starch. Microwave the pieces for 3-4 minutes. Remove from the microwave and place them on tissue paper in a bowl. Brush the pieces with olive oil (or butter) and sprinkle lightly with salt. Air fry at 200°C (390°F) for 10 minutes until golden brown.

  4. In a pan, fry the bacon until crispy. Set aside. Break one slice of bacon into pieces and fry further until darkened. Shape it to resemble the potatoes and sweet potatoes. Place the fried bacon pieces on top of the fried egg. Air fry the chopped potatoes again at 200°C (390°F) for 10 minutes until golden brown.

  5. Remove the potatoes from the air fryer and layer mozzarella cheese on top. Add the fried egg and bacon. Cover it so the cheese melts. Drizzle with Sriracha sauce, then place another potato piece on top to assemble.
