  • 400g sweet potato
  • Water (as needed)
  • 2 tbsp white sugar
  • 3 tbsp glutinous rice flour
  • 2 tbsp wheat flour
  • 1 tbsp cooking oil (for the dough)
  • 30 ml water
  • 2 tbsp cooking oil (for frying)

Directions

  1. Peel and cut 400g of sweet potatoes into pieces. Place the pieces in a microwave-safe dish, add a little water, and microwave for 5 minutes until soft. Mash the sweet potatoes thoroughly.

  2. Combine the mashed sweet potatoes with 2 tablespoons of white sugar, 3 tablespoons of glutinous rice flour, 2 tablespoons of wheat flour, 1 tablespoon of cooking oil, and 30 ml of water. Mix well to form a smooth dough.

  3. Divide the dough into portions of about 50g each. Roll each portion into a round, flat cake with your hands. Repeat until all the dough is used.

  4. Heat 2 tablespoons of cooking oil in a frying pan over medium heat. Fry the cakes in batches for 8-9 minutes, flipping occasionally, until golden and cooked through.
