  • 1 egg
  • Crab meat (imitation or fresh)
  • Pickled radish (yellow danmuji)
  • Spam (or ham)
  • Small green onion (scallions)

  • Pepper powder (to taste)
  • Cooking oil (for frying)

Directions

  1. Pat the tofu dry using a kitchen towel. Cut it into six equal pieces and place them on a tissue paper-lined plate. Cover the tofu with another layer of tissue paper and press gently to remove excess moisture.

  2. Carefully make a shallow cut in the center of each tofu piece to create a pocket. Slice the crab meat, pickled radish, small green onion, and Spam into thin strips. Insert the sliced ingredients inside the tofu pockets.

  3. Crack the egg into a bowl, then add salt and pepper powder. Whisk until well combined.

  4. Heat a pan over medium-low heat and add a bit of oil. Lightly coat the stuffed tofu with the egg mixture, then place it in the pan. Cook until golden brown on both sides.

  5. Reduce the heat and gently pour a small amount of egg mixture into the tofu pockets. Add one piece each of small green onion, Spam, pickled radish, and crab meat on top. Pour a little more egg mixture over the toppings. Carefully flip the tofu with a spoon and cook until the egg sets.
