Chop the green onion into small pieces and set it aside. Cut the tofu into bite-sized pieces. In a mixing bowl, combine: 200g minced pork, 150g chopped green onion, 6g (0.6 tbsp) allulose (or sugar), 12g (1.5 tbsp) cooking wine, 12g (1.5 tbsp) sesame oil (or cooking oil)28g (3.5 tbsp) soy sauce, 10g (1 tbsp) oyster sauce, 2g (1 tsp) ginger powder. Mix thoroughly with chopsticks to create the meat filling.

2. Step

Place a portion of the meat filling on each tofu piece. Cover with another piece of tofu to form a "sandwich." In a separate bowl, whisk the 2 eggs until smooth. Spread the egg mixture evenly over the tofu, ensuring all sides are well-coated.

3. Step

Heat a pan over medium heat and add some oil. Fry the tofu sandwiches slowly over low heat until golden brown and cooked through.

4. Step

In a small bowl, mix: 20g (2.5 tbsp) soy sauce, 5g (0.5 tbsp) allulose (or sugar), 3g (1 tsp) starch powder, 8g (1 tbsp) cooking wine, 100ml water. Pour the sauce into the pan with the cooked tofu. Gently flip the tofu to coat it evenly in the sauce. Cook over low heat until the sauce thickens and is fully absorbed.
