Ingredients

  • Flour: 650 g
  • Yogurt (or sour cream): 180 g
  • Warm milk: 180 ml
  • Vegetable oil: 160 ml
  • Eggs: 2
  • Sugar: 1.5 tbsp
  • Baking powder: 15 g
  • Salt: A pinch
  • Potatoes (boiled): 400 g
  • Butter: 40 g
  • Paneer (or cottage cheese): 100 g
  • Green onion: Finely chopped (to taste)
  • Salt: A pinch
  • Pepper: To taste
  • Egg yolk: 1
  • Milk: 1 tbsp
  • Sesame seeds: 150 g

Directions

  1. Mash the boiled potatoes in a bowl. Add the butter, a pinch of salt, pepper, and chopped green onion. Mix well. Add the paneer (or cottage cheese) and mix thoroughly. Set aside.

  2. In a large bowl, combine the yogurt (or sour cream), warm milk, vegetable oil, eggs, sugar, and salt. Mix until smooth. Gradually add the baking powder and flour, mixing continuously until a soft dough forms. If needed, add a small amount of plain flour while kneading to achieve a soft, non-sticky texture.

  3. Divide the dough into 20 equal portions and roll each into a ball. Roll out each ball into a flat circle. Place 1 spoonful of the filling in the center. Cut a small slit in the middle of the dough circle. Fold, wrap, and tie the dough around the filling to seal it.

  4. In a small bowl, whisk together the egg yolk and 1 tablespoon of milk. Brush the mixture over the shaped dough pieces. Sprinkle sesame seeds generously on top and place them on a baking sheet lined with parchment paper.

  5. Preheat the oven to 180°C (356°F). Bake for 35 minutes or until golden brown.
