Directions

  1. Finely chop the 4 potatoes and place them in a microwave-safe dish. Add a splash of water and a pinch of salt. Microwave for 6 minutes, stirring well halfway through. After microwaving, mix in unsalted butter and spicy green peppers (optional). Set aside.

  2. Add heavy cream (or milk) to the potatoes to achieve a moist and creamy texture. Adjust the amount of spicy green peppers according to your preference.

  3. Take the 3 chicken breasts and slice each one horizontally to create a pocket. Be careful not to cut all the way through. Use a meat mallet to flatten the thicker part of each breast for even cooking. Lightly season the chicken with salt and pepper. Fill the chicken pockets with the prepared potato mixture, spicy peppers, mozzarella cheese, and a little unsalted butter.

  4. Preheat the oven to 180°C (350°F). Place the stuffed chicken breasts on a baking tray and bake for 15 minutes. Add more mozzarella cheese on top of the chicken and sprinkle with parsley. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
