Finely chop the 4 potatoes and place them in a microwave-safe dish. Add a splash of water and a pinch of salt. Microwave for 6 minutes, stirring well halfway through. After microwaving, mix in unsalted butter and spicy green peppers (optional). Set aside.

Take the 3 chicken breasts and slice each one horizontally to create a pocket. Be careful not to cut all the way through. Use a meat mallet to flatten the thicker part of each breast for even cooking. Lightly season the chicken with salt and pepper. Fill the chicken pockets with the prepared potato mixture, spicy peppers, mozzarella cheese, and a little unsalted butter.
