Ingredients

  • 133g chicken breast, diced
  • 14g (0.5 tbsp) minced garlic
  • 4g (0.5 tbsp) curry powder
  • 2g (0.5 tbsp) chili powder
  • 60g (3 tbsp) tomato pasta sauce
  • 2 pinches salt
  • Black pepper, to taste
  • 250g (1 medium) potato
  • 3 pinches salt

  • 2-3 tbsp milk
  • 1 & 1/2 large red bell peppers
  • Olive oil
  • A pinch of salt
  • Black pepper, to taste
  • Mozzarella cheese, as needed
  • Parsley, for garnish

Directions

1. Step

Heat a pan with a little cooking oil over medium heat. Add the minced garlic and sauté until fragrant. Add the diced chicken and cook until it turns white. Stir in the curry powder, chili powder, and tomato pasta sauce. Season with salt and black pepper, then cook until the chicken is fully done. Set aside.

2. Step

Peel and thinly slice the potato. Place the slices in a bowl, add water, and microwave for 6 minutes (based on 700W power). Mash the potatoes while hot, then mix in salt, black pepper, and milk until smooth.

3. Step

Cut the tops off the red bell peppers and hollow them out. Lightly coat the inside with olive oil and season with salt and black pepper.
Spread a layer of mashed potatoes inside the bell peppers. Add the curried chicken filling, then cover with another layer of mashed potatoes. Top with mozzarella cheese and bake at 200°C (392°F) for 20 minutes. Remove from the oven and garnish with parsley before serving.
