  • 15 g vegetable oil
  • 20 g cane sugar
  • 40 g rice flour or cake flour
  • 120 ml milk
  • 1 tsp vanilla extract
  • 200 ml heavy cream
  • 26 g cane sugar
  • 90 g sour cream
  • 2 bananas
  • 3 kiwi fruits
  • Canned mandarin oranges
  • 8 strawberries

Directions

  1. In a mixing bowl, whisk together the egg, vegetable oil, cane sugar, rice flour (or cake flour), milk, and vanilla extract until smooth. Lightly grease a pan with oil and heat it over medium heat. Pour a small amount of batter into the pan, swirling to create a thin, even crepe. Cook until golden brown, then flip and cook the other side. Repeat until all the batter is used. Stack the crepes on a plate and set aside.

  2. Place a mixing bowl in a larger bowl filled with ice water to keep it cold. Using an electric mixer, beat the heavy cream, cane sugar, and sour cream together until soft peaks form. Set aside.

  3. Wash and cut the bananas, kiwi, and strawberries into small pieces. Drain the canned mandarin oranges. Place one crepe on a serving plate and spread a layer of cream over it. Add a layer of banana slices, then another crepe on top. Spread more cream and add a different fruit. Repeat the layering process, alternating between crepes, cream, and different fruits. Finish with a layer of cream on top and decorate with sliced strawberries.
