Ingredients
- 200g shrimp
- 1 tbsp cornstarch
- 1 tbsp red chili powder
- A pinch of salt
- 1 clove garlic, minced
- 210g rice
- 2 eggs
- 2 tbsp mayonnaise
- 1/2 tsp sugar
- 1/2 tsp lemon juice
- 1/3 tbsp whole grain mustard
- Salt & pepper to taste
- Cooking oil

Directions
1. Step
Crack 2 eggs into a bowl, lightly season with salt, and whisk well. In a separate bowl, season 210g of cooked rice with a little salt and mix well. Divide the rice into 4 portions and shape them into quarters. Place them on a plastic wrap-lined surface.

Finely chop or mash the shrimp in a bowl. Add a pinch of salt, red chili powder, and minced garlic, mixing well. Add cornstarch and mix again until evenly combined. Divide the mixture into two portions.
3. Step
Heat a pan over medium heat and add 2 tbsp of oil. Cook the shrimp mixture thoroughly, then remove from the pan. Add another 2 tbsp of oil and pour in the whisked eggs. Cook until lightly set. Place the rice portions onto the egg layer, then top with the cooked shrimp. Pour the remaining egg mixture over the shrimp and cook until set. Stack the remaining rice portions on top and cook until the layers are firm and golden.
4. Step
In a small bowl, mix mayonnaise, whole grain mustard, sugar, lemon juice, salt, and a pinch of chili powder. Spread the sauce over the cooked rice stacks. Serve warm and enjoy!
