Ingredients

  • 500g radish (coarsely chopped)
  • 150g canned tuna (drained)
  • A handful of green onions
  • 1 chili pepper (optional)
  • Spring onions (optional, for garnish)
  • 18g (3 tbsp) chili powder
  • 18g (1 tbsp) minced garlic
  • 16g (2 tbsp) soy sauce
  • 16g (2 tbsp) fish sauce
  • 16g (2 tbsp) cooking wine (or mirin)
  • 18g (2 tbsp) starch syrup or oligosaccharide
  • 10g (1 tbsp) brown sugar
  • 200ml water
  • 8g (1 tbsp) sesame oil (add at the end)

Directions

  1. In a pan, mix together chili powder, minced garlic, soy sauce, fish sauce, cooking wine, starch syrup (or oligosaccharide), brown sugar, and water. Stir well, then add the chopped radish. Turn on the heat and bring the mixture to a simmer.

  2. Stir the radish into the seasoning mixture, ensuring it’s well-coated. Add the green onions and chili peppers (if using), then cover and cook over medium heat for 5-6 minutes. Next, add the drained canned tuna directly into the pan without stirring—just let it absorb the broth. Cover again and cook over low heat for another 3 minutes.

  3. Once the broth has slightly reduced, drizzle in the sesame oil without stirring too much. Pour the stew into a serving bowl and garnish with spring onions. Serve hot and enjoy!
