Ingredients

  • 300g ground beef
  • ½ onion, finely chopped
  • 1 clove garlic, minced
  • 10g (0.7 tbsp) chicken stock
  • 4g (0.5 tbsp) curry powder
  • 2g (0.5 tbsp) cumin powder
  • 10g (2 tbsp) chili powder
  • 210g whole tomatoes (pureed if desired)
  • 1 tsp sugar
  • Black pepper, to taste
  • 200ml water
  • 500g potatoes
  • 18g (2 tbsp) olive oil
  • 2g (0.5 tsp) chili powder
  • 2 pinches salt
  • 3g (1 tsp) garlic powder (or minced garlic)
  • Cheese, as desired
  • Fresh rosemary, for garnish

Directions

  1. Heat some cooking oil in a pan over medium heat. Add the finely chopped onion and minced garlic. Sauté until fragrant. Add the ground beef and cook until browned. Stir in sugar, chili powder, curry powder, cumin, black pepper, and chicken stock. Mix well and cook for another 2-3 minutes.

  2. Add the whole tomatoes and water to the beef mixture. Simmer for about 10 minutes until most of the moisture has evaporated, leaving a slightly thick consistency. In a separate bowl, whisk together olive oil, chili powder, garlic powder (or minced garlic), and salt.

  3. Spread the beef mixture evenly in a baking dish. Sprinkle cheese over the beef, if using. Slice the potatoes into 5mm thick rounds and arrange them neatly over the beef. Brush the olive oil mixture evenly over the potato slices. Garnish with fresh rosemary. Bake in a preheated oven at 200°C (392°F) for 40-50 minutes, or until the potatoes are golden and tender.
