  • 3 potatoes, peeled and thinly sliced
  • 4 eggs
  • 1/2 onion, thinly sliced
  • A handful of small green onions, finely chopped
  • Salt, to taste
  • Black pepper powder, to taste

Directions

  1. In a frying pan, add enough olive oil to lightly coat the bottom. Add the sliced potatoes, sliced onion, and a pinch of salt. Fry on medium heat until the potatoes are tender and the onions are golden brown. Set aside.

  2. In a mixing bowl, beat the eggs and season with salt and black pepper powder. Gently mix in the fried potatoes and onions. Add the chopped green onions and combine well.

  3. In a clean frying pan, add a little olive oil and a small amount of butter over low heat. Pour in the egg and potato mixture, spreading it evenly. Cook for 5 minutes, until the bottom is set. Place a plate over the pan, carefully flip the pan to turn the mixture onto the plate, then slide it back into the pan to cook the other side. Cook for another 1-2 minutes until fully set.
