Directions
1. Step
Finely chop the green onions, half the onion, and 100g of Spam. Place the chopped Spam in a bowl and pour hot water over it. Set aside.
2. Step
In a bowl, crack the eggs and mix well. Add the finely chopped green onions to the eggs and mix until combined.
3. Step
Heat a pan and lightly fry 6 pieces of the chopped Spam until golden. Pour the egg and green onion mixture into the pan. Allow it to set, then flip it over gently to cook the other side. Place this cooked egg-and-Spam mixture on top of one serving of rice.
4. Step
Lightly oil a pan and sauté the finely chopped onion until translucent. Add 100ml of kelp broth, soy sauce, mirin, ketchup, sugar, and a pinch of chili powder (optional). Stir to combine and let it simmer. Once the sauce is cooked, pour it over the rice with the Spam and egg mixture.
