Directions
1. Prepare the yeast
In a large mixing bowl, combine warm milk, warm water, sugar, and dry yeast. Let it sit for 10 minutes to activate the yeast.
2. Make the dough
Add butter and ghee to the yeast mixture. Then add two whole eggs and three egg whites. Mix well. Gradually add flour and salt and knead the dough until soft and slightly firm (about 10 minutes by hand or using a mixer).
3. Let the dough rise
Place the dough in a clean bowl, cover, and let it rise in a warm place for 1–2 hours or until it doubles in size.
4. Divide and rest
Once risen, divide the dough into 130g portions. Cover and let each piece rest for 10 minutes.
5. Shape and decorate
Take one piece, wet your hands, and flatten it into a round shape. Place on an oven-safe baking tray. Brush with egg yolk and sprinkle sesame and nigella seeds. Use a fork to make decorative holes.
6. Bake
Preheat your oven to 500°F (250°C). Bake on the lower heat for 10 minutes. Then turn on the upper heat and bake for another 2 minutes until the bread turns golden brown.
