Directions
1. Step
In a large bowl, combine warm milk, warm water, yeast, and sugar. Let it sit for 5 minutes to activate the yeast. Then add melted butter and ghee, and mix well.
2. Step
Crack all five eggs into a small bowl and beat well. Reserve three egg yolks for brushing later and add the rest to the yeast mixture.
3. Step
Gradually mix in flour and salt to the wet ingredients. Knead into a smooth, medium-soft dough. Knead for about 10 minutes.
4. Step
Cover the dough and let it rise in a warm place for 1 hour or until doubled in size.
5. Step
After the dough rises, divide it into 150g portions to form medium-sized rolls.
6. Step
Grease a baking pan with butter or ghee. Place the dough pieces in it and spread them evenly.
7. Step
Brush the tops with reserved egg yolks and sprinkle nigella and sesame seeds.
8. Step
Cover and let rise again for 30 minutes. Meanwhile, preheat the oven to 450°F (220°C). Bake for 10 minutes until golden and puffed.
