Directions

  1. In a bowl, mix 400 grams of cottage cheese, 200 grams of butter, and a pinch of salt until well combined. Add 1 teaspoon of baking powder and 360–400 grams of flour. Mix thoroughly until the dough begins to form. Gradually add more flour and knead by hand to create a soft, pliable dough. Cover the dough and refrigerate it for 30 minutes.

  2. After chilling, divide the dough into two equal parts. Return one part to the refrigerator. Roll out the other part into a 0.5 cm thick layer. Use a round cutter to cut the dough into 8 cm circles.

  3. In a small bowl, mix 7 tablespoons of sugar with a pinch of vanilla. For each dough circle, fold it in half, sprinkle with the sugar mixture, then fold again into a quarter-circle. Sprinkle sugar on the top and gently press. Arrange the folded pastries on a baking sheet lined with parchment paper.

  4. Bake in a preheated oven at 180°C (356°F) for 13–15 minutes, or until golden and crisp.
