Wash the dates and soak them in water for 15 minutes. Soak the apricots in a separate bowl of water for 15 minutes. Toast the walnuts in a pan until golden brown, then chop them into pieces. In the same pan, roast the pumpkin seeds for 4-5 minutes, then combine them with the chopped walnuts in a mixing bowl.

After soaking, remove the seeds from the dates and chop the apricots. Blend the dates and apricots together in a blender until smooth. Add the walnut and pumpkin seed mixture to the blended dates and apricots. In a frying pan, toast the sesame seeds until they turn light golden. Spread them out on a sheet of cling film.

Shape the date and apricot mixture into a roll and press it into the sesame seeds, coating it evenly. Wrap the roll tightly in the cling film and refrigerate for 2 hours. Once chilled, unwrap the roll and slice it into individual pieces for serving.
