  • 300 grams flour
  • 1 egg
  • 140 grams milk
  • 12 grams sugar
  • 3 grams yeast
  • 3 grams salt
  • 30 grams unsalted butter
  • 80 grams butter
  • Black pepper (to taste)
  • Scallion (chopped, as desired)
  • Salt (to taste)
  • Egg wash (for brushing)
  • Sesame seeds (for sprinkling)

Directions

  1. In a bowl, combine the milk, sugar, egg, and yeast. Mix well. Add the flour and salt, then mix by hand until a dough forms. Cover the dough and let it rest for 20 minutes.

  2. After 20 minutes, add 30 grams of unsalted butter to the dough. Mix well to incorporate. Cover again and let the dough rest for another 40 minutes.

  3. Meanwhile, in a separate bowl, melt the 80 grams of butter (about 1 minute in the microwave or oven). Mix the melted butter with black pepper, salt, and chopped scallion.

  4. Roll out the dough into a square shape. Spread the butter mixture evenly over the dough. Roll the dough into a log shape, then cut it into several pieces. Cover and let the pieces rest for 40 minutes.

  5. Preheat the oven to 175°C (350°F). Brush each piece with egg wash, and sprinkle sesame seeds on top. Bake for 25 minutes or until golden brown.
