Directions

1. Step

Chop the sausage, green onion (white part), carrots, and spring onions. Separate the egg yolks from the whites.

2. Step

In a bowl, mix the cooked rice with the egg yolks until the grains turn yellow.

3. Step

Heat 3 tablespoons of cooking oil in a hot pan. Add the chopped green onions, sausage, and carrots. Stir-fry until the carrots are tender. Add the yolk-coated rice and stir-fry over low heat to evaporate excess moisture. Once the rice grains start to separate, pour in the egg whites and stir until fully cooked. 

4. Step

Add 1 tablespoon of soy sauce, a pinch of salt, and mix well. Stir in the chopped spring onions and mix gently. Turn off the heat. Sprinkle sesame seeds and black pepper, then give it one final mix.
