Russian Cottage Cheese Pastries, also known as Sochniki, are delightful traditional treats featuring a tender, buttery dough filled with a creamy cottage cheese mixture.   • 1 tsp icing sugar
  • 1 tsp baking powder
  • A pinch of salt
  • 120 g butter
  • 100 g sour cream
  • 1 egg
  • 300 g cottage cheese
  • 3 tbsp icing sugar
  • 1 tsp corn starch
  • 1 tsp vanilla sugar
  • 1 egg
  • Icing sugar (for dusting)

Directions

  1. In a large mixing bowl, combine the flour, icing sugar, baking powder, and salt. Add the butter, sour cream, and egg. Mix the ingredients well using your hands until a smooth dough forms. Cover the dough with plastic wrap and let it rest for 30 minutes.

  2. In a separate bowl, mix the cottage cheese, icing sugar, corn starch, vanilla sugar, and egg until smooth and well-combined.

  3. Roll out the rested dough using a rolling pin to your desired thickness. Spread the prepared cottage cheese filling evenly on top of the dough. Roll the dough into a cylinder or shape it into a round. Use a cookie cutter or mold to cut the dough into shapes, if desired. Place the prepared pieces onto a baking tray.

  4. Preheat the oven to 180°C (356°F). Bake the pastries for 25–30 minutes, or until golden brown. Once baked, remove them from the oven and let them cool slightly. Dust with icing sugar before serving.
