  • Kefir (or yogurt) – 150 ml

  • Vanilla extract – 1 tsp
  • Baking powder – 1 tsp
  • Salt – A pinch
  • Egg yolk – 1 (for glaze)
  • Milk – 1 tbsp (for glaze)
  • Powdered sugar – for dusting

Directions

  1. In a bowl, whisk together 1 egg, 2 tbsp sugar, vanilla, and salt until well combined. Add butter and kefir (or yogurt) and mix thoroughly. Stir in baking powder and gradually add flour (300-320 g), mixing until a soft dough forms. If needed, add a little more flour and knead gently until the dough is smooth and soft.

  2. Divide the dough into 20 equal pieces and roll each into a ball. Roll out each ball into a thin oval shape. Make small cuts along one side of the dough. Sprinkle 1 tsp sugar over the cut side. Roll the dough into a log, starting from the uncut side. Place the rolled cookies onto a baking sheet lined with parchment paper.

  3. In a small bowl, whisk together 1 egg yolk and 1 tbsp milk. Brush the glaze over each cookie.

  4. Preheat the oven to 180°C (350°F). Bake for 20 minutes, or until golden brown. Remove from the oven and sprinkle with powdered sugar while still warm.
