Directions
1. Preheat the Oven
Preheat the oven to 400°F (200°C).
2. Prepare the Tray
On a baking tray, add cherry tomatoes, tomato paste, sliced onion, and the garlic bulb. Drizzle with olive oil and sprinkle with oregano, chili powder (if using), salt, and pepper. Gently toss to coat everything evenly.
3. Roast
Bake for 25–30 minutes, or until the tomatoes are blistered and soft, and the garlic is roasted.
4. Make the Yogurt Sauce
In a bowl, mix yogurt, tahini, chopped parsley, lemon zest, lemon juice, salt, and black pepper. Stir well and refrigerate to chill.
5. Finish the Tomatoes
Once roasted, squeeze the garlic cloves out of the bulb and mix them into the tomato mixture.
6. Assemble the Dish
Spread the yogurt sauce on a serving plate. Top with the roasted tomato mixture and garnish with extra parsley.
