- 7 oz (200 g) pumpkin
- Rinse 10 large dates in hot water
- 1 egg
- 1/2 cup (50 g) oatmeal
- 1/3 cup (30 g) walnuts
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon

Cut the pumpkin into large pieces. Place the pumpkin pieces in the oven for 1–2 minutes to soften slightly.

Soak the dates in hot water for 10 minutes, then peel off the skins. Peel the skins off the roasted pumpkin. Blend 3 dates, the pumpkin, and 1 egg until smooth. Transfer the mixture to a bowl.

Finely chop the remaining dates and walnuts. Add the chopped dates, walnuts, oatmeal, baking powder, and cinnamon to the pumpkin mixture. Mix everything well.

Form the mixture into small cakes or rounds. Place them on a baking tray lined with parchment paper. Bake in a preheated oven at 350°F (175°C) for 20–25 minutes, or until golden and set.
