  • Egg yolk: 1
  • Almonds: 200g (7.0 oz)
  • Egg white: 1
  • Sugar: 2 tbsp
  • Powdered sugar: 5 tbsp

Directions

  1. In a large mixing bowl, combine the flour, salt, baking powder, and vanilla sugar. Add the butter, sour cream (or yogurt), and egg yolk. Mix until a soft dough forms. Cover the dough with plastic wrap and let it rest for 15 minutes.

  2. Grind the almonds in a blender until fine. In a separate bowl, whisk the egg white and sugar until combined. Mix in the ground almonds to form the filling.

  3. Divide the rested dough into 4 equal parts. Roll out each portion into a circular shape using a rolling pin. Cut the circle into smaller triangular pieces (like pizza slices). Place a small amount of the almond filling on the wide end of each triangle. Roll up the triangle into a crescent shape, starting from the wide end.

  4. Preheat the oven to 180°C (350°F). Place the rolled pastries on a baking sheet lined with parchment paper. Bake for 20–25 minutes or until golden brown. While still warm, place the pastries in a bag with powdered sugar. Shake gently to coat evenly.
