  • 300 grams potatoes
  • 1 teaspoon salt
  • 3 tablespoons flour
  • 50–60 grams milk
  • 1 green onion (chopped)
  • 1 tablespoon Greek yogurt
  • 4–5 drops lemon juice
  • A pinch of salt
  • Parsley (chopped)

Directions

  1. Grate one potato in a blender and microwave half of it for 5 minutes. Mash the microwaved potato, and combine it with the raw grated potato. Add 1 teaspoon salt, 3 tablespoons flour, and 50–60 grams of milk to the mixture. Stir in the grated green onion until well combined.

  2. Heat a non-stick pan and melt a thin layer of unsalted butter. Shape the potato mixture into a thin, circular layer in the pan. A thinner layer gives a tortilla-like texture, while a thicker one creates a heartier consistency. Cook on medium heat until golden and fully set, flipping as needed.

  3. In a small bowl, combine 1 tablespoon Greek yogurt, 4–5 drops of lemon juice, and a pinch of salt. Add chopped parsley and green onions to the mix. Stir well.
