Directions

1. Step

Microwave the tofu halves for 2 minutes. Remove the tofu from the microwave, place it in a cloth bag, and squeeze out the water. In a mixing bowl, combine the chopped potatoes, drained tofu, 1/2 teaspoon salt, chili powder (if using), and starch. Mix well.

2. Step

Heat cooking oil in a pan. Add the chopped onion and 1/2 teaspoon salt, cooking until the onion becomes translucent. Push the onion to one side of the pan and add the chopped bacon to the other side. Fry the bacon until crisp.Mix the onion and bacon together in the pan, then set aside.

3. Step

In another pan, heat some cooking oil. Add the potato-tofu mixture, spreading it out evenly. Cook on low heat until crispy. Sprinkle mozzarella cheese over the mixture, allowing it to melt slightly. Add the fried onion and bacon mixture on top, followed by green onion. Finish with another layer of mozzarella cheese. Cover and let cook on low heat until the cheese melts.
