- 400g potatoes
- 150g tofu (half a block)
- 30g onion
- 30g carrot
- 20g ham (chorizo)
- 1 chili pepper
- Salt and pepper (to taste)
- Mozzarella cheese
- 2 eggs

Lightly mash the 400g of potatoes in a bowl with a little water. Add a pinch of salt and microwave for 7–9 minutes. After microwaving, mix the potatoes well and set them aside.

Add 30g of carrots, 30g of onions, 20g of chorizo, and 1 chili pepper to a blender. Blend until well-mixed. Set aside.

In a pan, add 150g (half a block) of tofu and remove its moisture by cooking it on medium heat. Once the tofu is dry, add the blended vegetables. Stir-fry the mixture thoroughly, seasoning lightly with salt. Cook until well combined and fragrant.

Add the tofu-vegetable mixture to the prepared potatoes. Mix well and season to taste with additional salt if needed.

In a bowl, beat 2 eggs. In another bowl, prepare bread crumbs. Divide the potato mixture into 8 equal portions and shape each into a ball.

Flatten each ball with your hands and place a small piece of mozzarella cheese in the center. Reshape the ball to enclose the cheese completely. Roll each ball in the beaten egg and then coat it with bread crumbs.

Place the balls in an air fryer container. Lightly spray them with oil. Air fry at 180°C (356°F) for 15 minutes, then flip the balls and cook for an additional 5 minutes.
