  • Onion: 100g (chopped)

  • Salt: 1/3 teaspoon

Directions

  1. Peel and thinly slice 400g of potatoes. Chop 100g of onion.

  2. Heat 2 teaspoons of oil in a frying pan. Sauté the chopped onion until lightly browned. Add the sliced potatoes and stir-fry together for 8 minutes.

  3. In a mixing bowl, whisk 4 eggs. Add the chopped coriander, black pepper, and salt. Mix well. Combine the cooked potatoes and onions with the egg mixture.

  4. Heat 1 tablespoon of oil in the frying pan. Pour in the egg and potato mixture. Cook for 3–4 minutes over medium heat. Flip carefully, reduce to low heat, and fry for another 6 minutes until golden and fully set.
