Directions
-
Combine butter (180 g), powdered sugar (80 g), vanilla (a pinch), and salt (a pinch) in a bowl. Mix until smooth. Add vegetable oil (1 tablespoon) and egg (1), and mix well. Gradually add baking powder (1 teaspoon) and flour (310–320 g). Mix until a soft dough forms. If needed, adjust with a little extra flour to achieve the desired consistency.
-
Divide the dough into two equal portions: To one portion, add cocoa powder (1 tablespoon) and mix thoroughly. To the other portion, add cornstarch (1 tablespoon) and mix thoroughly. Roll out each portion separately between sheets of plastic wrap. Layer the two doughs together, roll tightly, and wrap in plastic wrap. Chill in the refrigerator for 30 minutes.
-
After chilling, slice the dough into small pieces using a knife. Place the pieces on a baking sheet lined with parchment paper.
-
Preheat the oven to 180°C (356°F). Bake the cookies for 20 minutes. Remove from the oven, spread jam on top of each piece, and garnish with almonds.
