  • 150g butter (softened)
  • 50g cornstarch
  • 60ml vegetable oil
  • Lemon or orange zest (to taste)
  • Pinch of salt
  • 400g all-purpose flour
  • 6g baking powder
  • Strawberry jam
  • Apricot jam
  • Shredded coconut (optional, for coating)

Directions

  1. In a large mixing bowl, cream together the softened butter, icing sugar, and lemon or orange zest until smooth. Gradually add the vegetable oil and eggs, mixing well. Then incorporate the cornstarch.

  2. Sift together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a soft, pliable dough forms.

  3. Preheat the oven to 180°C (350°F). Shape the dough into small balls, and gently press your thumb into the center of each to create an indentation. Arrange the balls on a baking tray lined with parchment paper.

  4. Bake in the preheated oven for 12–15 minutes, or until the cookies are lightly golden.

  5. Once cooled, spread apricot jam around the sides of each cookie, then roll in shredded coconut if desired. Fill the indentation in the center with strawberry jam.
