Directions
1. Step
Preheat your oven to 180°C (350°F). Grease a 25 cm (10-inch) round cake pan. Arrange the chopped almonds, pecans (or additional almonds), and chopped pears in the pan. Drizzle with 3 tbsp melted butter and sprinkle with 1 tbsp brown sugar.
2. Step
In a mixing bowl, beat the eggs, caster sugar, and softened butter until light and creamy. Add the vanilla sugar and mix well. In a separate bowl, whisk together the almond powder, baking powder, flour, and salt. Gradually fold the dry ingredients into the wet mixture, stirring until smooth. If using, add the lemon juice and mix until incorporated.
3. Step
Pour the batter over the prepared pear and nut topping in the cake pan. Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let it cool for a few minutes before inverting onto a serving plate. Sprinkle with cinnamon and the remaining 1 tbsp brown sugar before serving.
