Directions

  1. In a bowl, whisk together 1 egg, vanilla sugar (1 tsp), sugar (70 g), cornstarch (25 g), and milk (250 ml). Heat the mixture in the oven until thickened, stirring frequently. Add butter (40 g) and mix well. Cover the filling with plastic wrap to prevent a skin from forming, then set aside.

  2. In a separate bowl, combine butter (90 g), salt (a pinch), sugar (70 g), egg (1 piece), flour (230 g), and baking powder (1/2 tsp). Mix thoroughly with your hands until a dough forms. Press the dough into a 20 cm baking dish, ensuring it is evenly spread. Use a fork or slotted spoon to poke holes in the dough. Bake at 180°C for 25-30 minutes, then set aside to cool.

  3. In a small bowl, combine gelatin (10 g) with water (100 ml). Let it bloom for 10-15 minutes.

  4. Place peaches (400 g) and sugar (80 g) into a pot or oven-safe dish and heat until softened. Mix the softened peaches with the prepared gelatin.

  5. Pour the prepared filling over the baked dough. Spread the peach-gelatin mixture evenly on top. Refrigerate for 2-3 hours, or until fully set.
