Ingredients

  • 300 ml fresh orange juice (about 3 large oranges)
  • 150 ml full cream (30% fat)
  • 3 eggs (separate yolks and whites)
  • 60 g sugar
  • 30 g cornstarch
  • 1 sheet gelatin (or equivalent powdered gelatin)
  • Zest of one orange

Directions

  1. In a medium bowl, whisk together the egg yolks and sugar until well combined. Add the orange juice and cornstarch to the mixture, whisking until smooth. Pour the mixture into a saucepan and heat over medium heat, stirring constantly, until it thickens into a custard.
    Remove from heat and stir in the softened gelatin sheet until dissolved. Pour the custard into a pie crust or serving dish and refrigerate until set.
