Ingredients

  • 5 cm ginger root (finely chopped)
  • 5-7 cardamom pods
  • 1 sprig of thyme
  • Zest of 1 lemon
  • 800 ml water (divided)
  • 2 teaspoons honey (divided)
  • 6 teaspoons gelatin
  • 400 ml warm coconut milk
  • Zest of 1/2 orange
  • 600 ml fresh squeezed orange juice
  • 1 cinnamon stick
  • 3 star anise
  • A pinch of turmeric (optional)
  • 1 tablespoon black tea leaves
  • 9-10 cardamom pods (for blending)
  • Some orange peel (for blending)
  • 1 apple (cut into pieces)
  • 1 teaspoon honey (for blending)

Directions

  1. In a pan, bring 300 ml of water to a boil with the chopped ginger root, 5-7 cardamom pods, thyme sprig, and lemon zest. Boil for 1-2 minutes. Pour the boiling water into a bowl, add 1 teaspoon of honey, and stir to dissolve.

  2. In another bowl, combine 6 teaspoons of gelatin with 200 ml of cold water, mixing well until the gelatin dissolves. Add the hot water mixture to this, stirring to combine.

  3. Add 400 ml of warm coconut milk to the gelatin mixture and stir well. Pour this mixture into a bowl or mold and refrigerate to set.

  4. In a separate pan, heat 300 ml of water with 1 cinnamon stick, 3 star anise, and a pinch of turmeric until it boils. Strain the mixture and keep it in a bowl. Pour in the fresh squeezed orange juice and stir. Let this cool down to room temperature, then refrigerate it.

  5. In a blender, combine 1 tablespoon of black tea, 9-10 cardamom pods, 5 cm of finely chopped ginger root, some orange peel, and 1 apple (cut into pieces). Add 1 teaspoon of honey and blend everything until smooth. Add hot water to reach your desired consistency and blend again.
