Ingredients

  • 310 grams sugar
  • 2 large eggs
  • 100 grams Greek yogurt
  • 2.5 tsp orange zest
  • 10 grams coconut flakes
  • 120 grams flour
  • 200 ml fresh orange juice
  • 2 grams cinnamon
  • 3 grams salt
  • 6 grams gelatin
  • 160 grams butter, at room temperature

Directions

  1. In a saucepan, melt the sugar over low heat until golden brown. While it’s melting, whisk the eggs, Greek yogurt, 1.5 tsp of orange zest, and coconut flakes in a large bowl. Add the flour and mix well. Pour this mixture into a microwave-safe bowl and heat in the microwave for 4-5 minutes, until slightly firm.

  2. Once the sugar has melted, add the freshly squeezed orange juice directly to the saucepan, along with the cinnamon, salt, and gelatin. Stir well until the gelatin dissolves completely.

  3. Add the softened butter to the warm orange juice mixture and blend with an electric mixer until smooth (the butter should not melt fully). Break the microwaved mixture into pieces and divide evenly into three bowls. Pour the orange juice mixture over each bowl, distributing it equally.
